Anyhow, I thought I'd share one of my new favorite recipes. These lovely, bright colors remind me of warmer days, farm markets and fresh veggies, and the spring and summer seasons that lay ahead.
Cowboy Caviar
1 can shoe peg corn (I use regular corn)
1 can black-eyed peas
1 can black beans
1 c. chopped celery
1 4oz. jar of pimentos, chopped
1 red onion, chopped
1 c. olive oil
1 c. sugar
1/2 c. apple cider vinegar
Combine oil, sugar, and vinegar over medium heat until sugar is dissolved. Drain and rinse corn, beans, and peas, and combine all ingredients in a large container. Cover with marinade and refigerate overnight. Drain and serve with Tostitos Scoops chips.
Love this recipe !!! I'm not a fan of beans, really, but the marinade makes it just right . . . the perfect amount of sweetness and tang ! I doctor the recipe a little, though, adding some red peppers occasionally, and using canola oil instead of olive oil . . . I experienced some congealing with the olive oil the first time I made this ! Easy and tasty !!
